Kickin’ Alfredo Sauce

A few days ago I posted a recipe for Easy Alfredo Sauce and in that post I failed to mention  a great variation.   I like foods that have a little kick to them and I like to use cayenne pepper and crushed red pepper flakes.  This is an easy addition to Alfredo sauce that will give it some heat!

Kickin’ Alfredo Sauce

Ingredients:

1 Pint Heavy Whipping Cream

1/4 Cup Flour

2 Tsp Minced Garlic

1 Tsp Crushed Red Pepper Flakes

1/2-1 Tsp Cayenne Pepper(more or less depending on how spicy you like your food)

1 Tsp Onion Powder

1/4 Cup Butter

1 1/2 Cups Shredded Parmesan

Salt(to taste)

First, melt the butter in a medium sauce pan with the cayenne pepper, crushed red pepper flakes, minced garlic, and onion powder. Simmer over low heat for about 3 minutes before adding the whipping cream.  Stir continuously over medium-low heat for approximately 10 minutes.   Next, slowly stir in the flour with a whisk until well blended. Taste your sauce and add a few shakes of salt if it is needed.  Add the Parmesan cheese and continue to stir until the cheese is melted.    Finally, serve over your favorite pasta.

Easy Alfredo Sauce

This is a very simple way to make an Alfredo sauce. I always think this recipe should be more difficult but really it is this simple and it is great over all kinds of pasta. You can add seafood, chicken, or vegetables and make a complete meal.  This is something that our family doesn’t indulge in very often but it is definitely a favorite!

Baked Chicken Wings

Weather you are still in need of a New Year’s Eve Party appetizer or you want to have something great to snack on during the upcoming bowl game parties, these wings are tasty and perfect for any occasion.  My daughter likes to help me make these, they are really not that hard and they taste great. We will be using our Barbecue Sauce Recipe from an earlier post.

Baked Chicken Wings

Ingredients:

3 Lbs. Chicken Wings(cut apart at the joints)

2 Cups Flour

3 Cups Barbecue Sauce (You can use your favorite, but our homemade BBQ Sauce will not disappoint!)

First, pre-heat the oven to 375 degrees. Next, place the flour in a large bowl and evenly coat the chicken wings with the flour(coat only a few at a time) Then, arrange the chicken on 1 or 2 lightly greased cookie sheets. Bake at until golden brown (30-35 minutes).

While the wings are cooking, prepare the Barbecue Sauce. Remove the cookie sheets from the oven. Use a large spoon to pour sauce over the chicken wings. Turn the wings so  the sauce coats both sides. Return the wings to the oven and bake about 10 more minutes, then turn the wings once and bake an additional 10  minutes.  The sauce should be bubbling. These will be hot, so let them cool about 5 minutes before diving in! This will make about 3 dozen wings.

Quick and Easy BBQ Sauce

Around our house we usually eat chicken at least twice a week and usually have a night where we make a pork dish of some kind.  My daughter will eat chicken, pork, and beef and she’ll always have seconds if there is barbecue sauce around.  If we happen to run out I know a quick recipe to make a great bbq sauce. It is especially good on chicken breasts and/or pork ribs.  The best part is, these are usually ingredients I have in the kitchen anyway.

Quick and Easy BBQ Sauce:

Ingredients:

1 Cup Ketchup

1/3 Cup Packed Brown Sugar

1/4 Cup Cider Vinegar

1 Tbs Butter

2 Tbs Soy Sauce

2 Tbs Worcestershire

1 Tbs Ground Mustard

1/2 Tsp Ground Ginger

2 Tsp Garlic Powder

First,  melt the butter in a medium sauce pan.  Next,  just add all the other ingredients and stir.  Simmer for about 10 minutes, then remove from heat. It is that easy….and delicious.  If you want to give it a little kick just add a few table spoons of hot sauce.
