Cindy’s Banana Bread

A friend of mine gave us this recipe and it makes great banana bread so I thought I would share.  You can put it together pretty quickly and it is a great treat fresh from the oven. :)

Cindy’s Banana Bread

Ingredients:

1/3 Cup Butter(melted)

1 Cup Sugar

1 Egg

1/2 Cup Milk

1 Tsp. Baking Powder

1 Tsp. Baking Soda

2 Cups Flour

3 Mashed Bananas

First, pre-heat the oven to 350 degrees.  Next, mix together the mashed bananas, butter, egg, and milk.  Set this mixture aside.  In a separate bowl, mix together all dry ingredients.  Now, slowly mix the dry ingredients into the wet mixture.  Spray the loaf pan with non-stick cooking spray and evenly pour the batter in.  Place in the oven and bake for one hour.

Taco Sandwiches

I had planned out our dinner menu for the night based on what we had in the kitchen.  We had chicken, guacamole, sour cream, cheese, lettuce, salsa, and taco seasoning.  I announced we would be having tacos to my family and everyone seemed  happy with that decision.  That was until I discovered we did not have enough taco shells for everybody.  Rather than race to the store to buy taco shells, I decided to make tacos, but in the form of a sandwich.  They actually turned out great, and I will be making them again!Taco Sandwiches

Ingredients:

5 Sandwich Rolls(we used one per person, adjust the recipe accordingly for more or less people)

1 Cup Guacamole

1 Cup Sour Cream

1 Cup Shredded Cheddar Cheese

2 Cups Chopped Lettuce

2 Large Chicken Breasts(Cooked in 1 Tbs Lime Juice and 1 Tbs Crushed Garlic)

2 Tbs Taco Seasoning

1/2 Cup Salsa

First, slice the sandwich rolls and lay them open-faced on a cookie sheet.  Sprinkle them with the taco seasoning and place under the broiler for 1-2 minutes until they are toasted.  Now, slice the cooked chicken in thin strips and evenly layer them on the sandwich roll.  Next, sprinkle on the shredded cheese. Top the cheese with some salsa and lettuce.  Spread approximately 1-2 Tbs of sour cream and guacamole on the  sandwich roll. and close your sandwich!  The best part about this recipe is that fact that you can make it to suit your own taste.  You can add additional ingredients or leave any off that you don’t like.  I served this with a handful of tortilla chips.  It made a filling dinner. :)

 

Parmesan Potato Patties

Last night we were deciding what to make for dinner and we decided on some chicken, asparagus, and mashed potatoes.  My eight year old wanted to be in charge of the mashed potatoes because she had a special idea.  Usually we add some special ingredients like we do for our thanksgiving mashed potatoes.  I asked her what she had in mind and Parmesan Potato Patties is what she came up with.  They were very tasty and just a little different from having regular mashed potatoes.

Parmesan Potato Patties

Ingredients:

3 Large Russet Potatoes(peeled and diced)

3/4 cup Half n Half

1/2 Stick of Butter

3/4 Cup Shredded Parmesan Cheese

1/2 Tsp Salt

1/2 Tsp Black Pepper

First, boil the potatoes until they are fork tender.  Once the potatoes are cooked, drain them and add the butter,half n half, salt, and pepper.  Mix together over medium speed for 1-2 minutes(until smooth).  Next, cover the potatoes and place in the refrigerator to cool. Cool for approximately 30 minutes.  The potatoes need to be slightly cooled so they are easier to form into patties and so the Parmesan cheese does not melt right away. Once the potatoes are cooled, slowly mix in 1/2 cup of Parmesan cheese.  Using a 1/2 cup measuring cup, place 6-8  3″ potato patties on a cookie sheet(just empty the half cup scoop and press down slightly to make approximately a 3″ circle of mashed potatoes).  Now, sprinkle the remainder of the cheese evenly over the potato patties.

Put them under the broiler on low for 6-7 minutes or until the cheese is browned and the potato patties are hot.
